Location

The cellars are in Morey-Saint-Denis, just as one enters the village from the main road. Vineyard holdings are headed by a good slice of Clos de la Roche, and a small parcel in Charmes-Chambertin. 1ers Crus include Morey Les Chaffots above Clos-Saint-Denis, Chambolle Les Baudes adjacent to Bonnes-Mares, and Gevrey Aux Combottes which is wedged between the Grands Crus of Charmes-Chambertin, Larticières-Chambertin and Clos de la Roche on the Gevrey-Morey border.

Soils

Hubert Lignier’s vineyards around Morey-Saint-Denis grow on Bajocian limestone, a poor brown calcareous marl, giving structure, elegance, and mineral character to the wines.

Viticulture & Winemaking

Certified organic since 2019.
In the cellar, all grapes are 100% destemmed and fermented in traditional lined cement vats using only indigenous yeasts. Fermentation temperatures are allowed to rise naturally to 33–34°C, and pigeage is done by foot to optimize color and tannin extraction. After 2 weeks on the skins, the young wines are drawn off, and selected press wine is blended back to enhance structure. Malolactic conversion occurs either in cask or sealed vats, depending on the cuvée. Aging lasts 18–24 months in barrels, with 50% new oak for premier and grand cru sites, and 25–33% for village wines. The wines are bottled without fining or filtration, preserving purity, texture, and the characteristic depth and finesse of Lignier wines.
