Domaine Boris Champy

Burgundy

Hautes Côtes de Beaune

Born in 1974 in Champagne, Boris Champy is a seasoned oenologist with experience on both sides of the Atlantic. He spent ten years at California’s Dominus estate before returning to Burgundy as technical director of Domaine Louis Latour in Beaune and later manager of Clos des Lambrays in Morey-Saint-Denis. These years gave him deep expertise from vine to wine and an entrepreneurial spirit that led him to create his own estate. Boris purchased the estate from Didier Montchovet, who had no successor. Montchovet’s domaine was the first in Burgundy to adopt biodynamic viticulture, and he entrusted Boris not only with the property but also with the philosophy that has guided it since 1984. The transition began informally during the 2019 harvest, which Boris joined, ensuring a seamless handover of both the vineyards and their pioneering approach. Boris is committed to the future of the Hautes-Côtes, seeing its potential, especially at higher altitudes in a warming climate. Together with neighboring growers, he seeks to enhance the reputation of this remarkable yet underappreciated region. Domaine Boris Champy highlights the nuances of localities, microclimates, exposures, and other vineyard subtleties.

Viticulture & Winemaking

At Domaine Boris Champy, viticulture is both organic and biodynamic, with vineyards managed as islands of biodiversity. Hedges, walls, meurgers, fruit trees, and natural enclosures foster a balanced ecosystem, while sheep help maintain cover crops and enrich the soil. The estate reflects a low-intervention, agroecological philosophy: Boris emphasizes respect for the land, biodiversity, and terroir over manipulation.

Grapes are hand-picked at optimal maturity, with some parcels fermented as whole bunches to enhance aromatic complexity. Whites are gently pressed using a vertical press, while reds undergo delicate fermentation in wooden vats or foudres, with limited extraction to preserve finesse. Wines are aged on lees for approximately 12 months, often in barrels with a proportion of new oak, and are unfined, unfiltered, and not chill-stabilized, allowing their natural character to shine. Every decision at Domaine Boris Champy is guided by the desire to express the nuances of localities, microclimates, and exposures, making each wine a true reflection of the Hautes-Côtes’ hills and valleys.
